A macaron is a meringue-based confectionery made from a mixture of egg whites, almond flour, and both granulated and confectionery sugar. The double-decker macaron filled with buttercream, jam or ganache that is popular today was invented by the French pâtisserie Ladurée.

It is not a coconut macaroon.

I fell in love with French macarons in 2009. You can say I’m obsessed. I love making them and I love eating them. I have yet to find a macaron that matches the quality and taste of Ladurée so I’ve turned my obsession into a picture blog.

I hope you enjoy the pictures. I hope you are inspired to create your own macarons.

Remember, it’s macaron — one O.
